Simple Sausage Skillet
Ingredients:
1 teaspoon canola oil
2 ounces smoked turkey sausage, cut diagonally into 1/2-inch slices
1 cup frozen diced hash brown potatoes
1/2 of a small zucchini, halved lengthwise and cut into 1/2-inch pieces
1/2 of a medium red sweet pepper, coarsely chopped
1/3 cup thinly sliced red onion
1 clove garlic, minced
1/4 teaspoon chili powder
1/4 cup bottle salsa
In a large nonstick skillet, heat oil over medium heat. Add sausage, potatoes, zucchini, sweet pepper, red onion, garlic, chili powder, and 1/8 teaspoon black pepper to skillet. Cook 4 to 5 minutes or until sausage is lightly browned and vegetables are tender, stirring occasionally. Spoon salsa over saursage mixture.
